Yeah, Diarmuid is pronounced Dermott by Anglophones—that’s the closest to what Gaelic speakers say that an Anglophone can get. (But pronunciation of Irish Gaelic is fairly variable by region.) The spelling is sometimes Anglicized to that, too. The good cleric’s surname, by contrast, IS Anglicized in spelling. I believe Martin would be an Anglicization of Ó Máirtín.
I’ve nothing to say about Irish orthography. The most irregularly spelt language in the world is English. People who live in glass houses…
